Alicia Walter loves to feed people. She is a chef, educator, speaker, writer, and former farmhand with a decade of experience in the food and beverage industry. She is currently based in New York City. Formerly, she was Chef and Operator of Once Upon A Tart in NYC, Chef of Private Dining at Vetri Ristorante in Philadelphia and Resident Chef of La Scuola at Eataly NY. She has also staged at Michelin-starred Joia in Milan and Guido's in Alba, at a macrobiotic retreat center in Belgium and produced and cheffed private functions for corporate events and high wealth individuals. 

Her food is inspired by her environment. She often puts herself in the center of farmers' markets but also has the ability to sniff out high quality ingredients in the most unlikely places. Alicia is also an avid forager and has pulled together satisfying meals in the most remote, minimally-equipped locations. Her dishes skew Mediterranean and vegetable-forward but her range includes the world of superfoods and searing, braising and grilling meat as well. 

Alicia finds culinary education deeply rewarding and has taught over 500 cooking classes at Vetri Ristorante, Eataly NY, Del Posto, New York Botanical Gardens, The New York Horticultural Society, with the International Olive Oil School and out of her Airstream trailer.  She has been a featured chef at the James Beard House and also completed a Chef Residency at the Marble House Project in Dorset, VT and was a Food Scholar and Longhouse Chef-in-Residence at Molly O'Neill's One Big Table in upstate New York. Alicia has a certificate in Advanced Food Policy and Sustainability from the University of Gastronomic Studies in Bra, Italy and a BA in Liberal Arts.
